Mark Recreates the Scotch Broth for Land of Food and Drink 2014

I am very proud to be a part of the 2014 Food & Drink campaign as a chef ambassador to champion Scotland’s larder and build our reputation, both at home and abroad, as a true Land of Food and Drink.

The national industry-led campaign aims to showcase producers both large and artisan, fantastic traditional tastes and flavours, gastronomic innovation, regional specialities and iconic world renowned products - becoming an ambassador of 2014 Food & Drink is a perfect fit.

With the eyes of the world on Scotland during such a landmark year, the 2014 Food & Drink campaign is allowing me to join in the celebrations of food and drink across the country. This year Scotland plays host to two of the world’s greatest sporting events – the Commonwealth Games and 2014 Ryder Cup – not forgetting the year-long Homecoming Scotland programme which will generate an abundance of opportunities for our food and drink industry to shine. This campaign is also giving me the chance to educate Scotland about the importance of seasonality and locality – two rules that I abide by in the kitchen and out of it.

My first recipe for the campaign is my modern version of the classic Scotch Broth - which you will find on the menu at Restaurant Mark Greenaway. I use a Napier Coffee Machine, but don't worry I've also included a more conventional recipe too. You can watch me cook the recipe on the Scotsman website now.
